Grape brandy must be aged for 2 years in oak or longer. The aging of brandy is a delicate and sensitive process – a process sadly with no short-cuts.
We have been fortunate enough to partner with some outstanding distillers, who have been kind and generous enough to share some of their precious pure potstill aged stock with us. We have taken this stock, blended it and continued to age it in bourbon barrels and some new American oak to create our own distinctive, unique American brandy. American Brandy with Copper & Kings DNA and personality. Something we are proud to call our own.
As we move forward – we continue to blend old stock backwards in to new make distilled by ourselves in our distillery in Butchertown, in a variation of the “Solera" system, ensuring that the DNA style is maintained through the years and the maturation cycles.

Small batch Distillation of superior, acidic, highly aromatic wine selected for exceptional quality. Our primary grape varietals are Muscat De Alexandrie, Chenin Blanc and Colombard.
Non-chill filtered and unadulterated by boisé (powdered oak, shavings or infusion) other flavors, sugar or caramel color. Some cloudiness May be apparent at colder temperatures.
Matured in Kentucky bourbon barrels with support from medium-char New American white oak barrels for balance, complexity and a polished, velvety finish.
Our signature “Immature” Brandy (grape brandy aged for less than 2 years is defined as Eau De Vie or “Immature” Brandy - we find the Immature brandy description fitting, and understandable). It is double distilled Muscat brandy and non-chill filtered, with gorgeous texture, mouthfeel and a complexity of flavor very unusual for un-aged spirits. 90 Proof with structure and heft to ladder cocktails or enjoy on the rocks. Some cloudiness may be apparent at colder temperatures.
Matured in Kentucky Bourbon Barrels and Sherry Casks.

We follow a similar “Solera” DNA process with our apple brandy. Our apple-wine is sourced from Michigan.
Our ambition has been to distill a classic absinthe with our own signature American riff upon its formal structure.
Copper & Kings Absinthe Blanche is a confident American Absinthe. Double distilled Muscat brandy in American copper potstills handcrafted by Vendome Copper & Brassworks in Butchertown, Louisville, Kentucky.
Traditional absinthe botanicals - Grande Wormwood, Anis, Fennel and Hyssop, together with accent botanicals, are macerated in Muscat Low Wine for approximately 18 hours and then double distilled.
Absinthe Blanche - Pure copper pot-distilled alembic absinthe - distilled herbs, roots and botanicals orchestrated in harmony, with no post-distillation infusions to add color or flavors.
Vapor-Distilled Absinthes – Lavender, Citrus, Ginger - Pure copper pot-distilled Colombard wine with distilled herbs, roots and botanicals orchestrated in harmony, with no post-distillation infusions to add color or flavors. Additional flavors are layered on top of the traditional absinthe base using a process of vapor-distillation more typical of the gin distillation process.
Non-chill filtered, with no added sugar or colorants for a rich, seductive, uncorrupted flavor. A superb, authentic translucent louche, and excellent natural oily lacing in the glass.
Pre-bottling dilution is done slowly, and progressively to avoid shocking the distillate and to open the natural flavors.
Our ambition is to directly infuse the character and personality of the individual beers within the American Brandy with honest authenticity.
The brandy is aged for a full 12 months in beer barrels. The spirit proof entering the barrel is a full bodied +/- 130 Proof to maximize flavor extraction. Bottle proof at 111 Proof is chosen to maximize the craft beer flavor profiles by minimizing dilution with just a touch of water to enable the flavors to authentically bloom & soften the heat just a touch.
The brandy is unadulterated by any additives that may impact on the authentic & direct flavor from the barrels - Non-Chill Filtered - which would extract flavor, no addition of boisé - which would muddy flavors with a fake oaky profile, no caramel color - the spirit is the natural color from the barrel.
The craft beer barrels have deeply influenced the aroma & taste of the brandy with their unique profiles & personalities. They boogie.
